It’s made with all of our favorite taco salad fresh ingredients, served with chips and salad. It’s a real family treat for dinner, and it’s great to use up leftover ingredients mingling in your refrigerator!

Oh, we love serving this layered chicken salad with rice in a pretty bowl. If you’re a taco salad family like we are, then you will love everything about this salad today. I grew up eating a lot of “taco salads,” the layered taco salad recipe with Doritos. The dressing always made it one of my favorite dinners.

Today we’re layering rotisserie chicken, brown rice, lettuce, olives, cheese, tomatoes, and more! Think of taco bowls served in one giant bowl!

An easy dinner tonight? Yes, it is! This Chicken Rice Layered Salad is always so pretty when it’s served in a large parfait dish. But wait–you can totally add all the ingredients into an epic bowl; toss and serve, too!

Ingredients for Chicken Rice Salad

  • Shredded lettuce: optional to chop your favorite lettuce, like Romaine or spinach
  • Rotisserie chicken: you can use ground turkey or beef or pork
  • Black olives
  • Corn salsa (Trader Joe’or regular corn, drained)
  • Cooked brown rice: or use cauliflower rice, white rice
  • Red or yellow bell pepper
  • Red onion
  • Cherry tomatoes
  • Mexican cheese
  • Guacamole
  • Cilantro
  • Favorite salad dressing: you can also mix salsa and sour cream together for an easy recipe
  • Taco or corn chips

How do you make a Layered Taco Salad?

  1. In a large glass parfait dish, layer the above ingredients, ending with the guacamole on top.
  2. Garnish with fresh cilantro; cover with foil or plastic wrap and refrigerate until ready to serve.
  3. Lightly toss with your favorite dressing. Serve with chips and salsa!

Tips and substitutions:

Like the 7 layer taco salad with ground beef, you can use beef, ground turkey, or even shredded pork for this recipe.

Make the ingrients the day before and assesmble the day you are serving.

Set it out with optional toppings like more salsa, guac, sour cream, hot sauce, extra onions and olives, etc. The more toppings, the more fun this recipe is.

Use our favorite salad dressing (like a lime cilantro), or you can make your own by adding 1 cup of salsa to 1/2 cup of sour cream (ratio). Easy and so good. Or, with salsa and the guac, you may not choose to serve it with a salad dressing.

How to serve a layered salad

Of course, you may ask, but how do you serve this salad?

I get it made, refrigerate it, and then right before serving, I dump it into a very large bowl.

Then it’s up to you, as you can either toss it lightly with dressing, or set out dressing and let everyone dress their own. We love this recipe served with coleslaw and our jalapeno biscuits.

  • 3 cups shredded lettuce
  • 2 cups rotisserie chicken, chopped
  • 1 cup sliced black olives
  • 1 cup corn salsa (Trader Joe’or regular corn, drained
  • 2 cups cooked brown rice

  • 1 small red onion, thinly slices
  • 2 cups shredded Mexican cheese
  • 1 cup guacamole
  • Red and yellow cherry tomatoes
