I love to bake all year round but even more so for the holidays. What’s especially fun for me is switching up some of our favorite recipes to fit whatever holiday or season we’re in. Our yummy Cut Out Sugar Cookies are definitely one of our favorites to do this with. I’ve stocked up on Christmas, Halloween, Easter, and more cookie cutter variations because these cookies are great any time of year. Today, I’ve got another awesome Chocolate Mint Cookies Recipe for you. Plus, you can just switch up the sprinkles and/or food coloring and you’ve got the perfect cookie for any occasion!

Sprinkled Chocolate Mint Cookies

In my opinion, there are very few combinations better than chocolate and mint. Both are favorites of mine so mixing them together for this Sprinkled Chocolate Mint Cookies Recipe is sure to be a winner! These cookies are pretty easy to make and perfect for beginners or novice bakers.

Ingredients:

  • 2 sticks butter, softened
  • 1/2 cup granulated sugar
  • 2 teaspoons mint extract (NOT peppermint) — I use Watkins Pure Mint Extract
  • 1 teaspoon baking powder
  • 2 cups flour
  • 1/4 teaspoon sea salt
  • 10-15 drops green food coloring
  • 1-2 cups chocolate melting wafers
  • festive holiday sprinkles

Directions:

  1. In a large mixing bowl (either using a stand mixer or hand mixer), cream butter and sugar until the mixture becomes light and fluffy.

  2. Add in the mint extract and food coloring.

  3. In a separate bowl, combine flour, baking powder, and salt.
  4. Slowly add in the flour mixture to the butter and sugar. Mix until the dough forms a ball.
  5. Divide the dough in half and place on a sheet of wax paper.Chocolate Mint Cookies Recipe (5)
  6. Roll each half into a log shape, about 8 inches long each.

  7. Chill the logs, wrapped in the wax paper for at least 2 hours or overnight. (If you don’t have the time to wait, 30 minutes in the freezer will work well too.)
  8. After chilling dough, preheat oven to 300 degrees.
  9. Slice each log into 1/4 inch slices using a sharp knife.
  10. Arrange your cookie slices on a parchment paper lined pan. Be sure to space them out by at least 2 inches for proper baking.

  11. Bake cookies on the top rack of your oven for about 22-24 minutes or till slightly browned on the bottom.

  12. Transfer cookies to a wire cooling rack to cool.
  13. Melt your melting wafers in a double boiler.

  14. Gently dip each cookie half way into the chocolate, top with festive sprinkles, and place on parchment paper to set.

Notes

***The back of the cookie doesn't need to be dipped in chocolate. Just the top.

***Change food coloring and sprinkles to make these a great choice for any holiday. (Example: pink food coloring and heart sprinkles for Valentines Day.)

***You can also use white chocolate melting wafters or white almond bark for a change.

***Logs can be rolled into circles or ovals.
